Level 7 Writing: Recipe Ukrainian Borsch

To cook a delicious Borsch, you will need these ingredients:
- meat I pound (beef, pork, or chicken--your choice)
- potatoes (3-4 medium)
- beets (1-2 medium)
- carrots (1-2 mediun1)
- onions (I big or 2 small)
- cabbage (half of the big head or one medium)
- herbs (parsley, dill, or both, optional), fresh or dried 1 garlic (1-2 cloves), optional
- tomato paste or tomato sauce
- I Tbsp. sour cream or less
If you are a vegetarian, you can easily change meat into beans by adding one can of beans at the end of cooking.
Take an approximately 6-quart saucepan, and put in the meal you chose after you wash it, and cut it into pieces. Add half a pot of water. When it boils add salt and try. Let it cook. When the meat has become soft, the Borsch is ready for the next step. Add peeled potatoes that are cut into cubes or strips (like French fries style), and boil it.
Meanwhile, peel the beets and grate them on the grater, or cut with your knife into strips. Pour some oil into the pan, add the beets, and fry a little. Then, add 3-4 Tbsp. of tomato paste, pour some water to cover the beets, and stir until tomato paste dissolves. Cook the beets with the lid closed until soft, and set aside.
Peel the onions and cut into small cubes, and grate or cut carrots (optional). Add some oil into the pan, then add the onions and carrots, and fry until onions become golden and carrots change color, or until soft. Set aside.
On this step, if the potatoes become ready, add beets and after 3-4 minutes, add fried onions and carrots.
For vegetarians, add the can of beans in the Borsch at this time.
Cut the cabbage into thin strips with a knife, or if you have a special knife for cabbage, it would be easy. Next add cabbage to the Borsch, and let it boil until soft. Try it and, if needed, add more salt and tomato paste. At the end, add chopped herbs, garlic (optional), and black pepper. You can also add bay leaves; it will add a special taste to the Borsch.
Your Borsch is ready to be served. When the borsch is on the plate, add some sour cream on the top of the Borsch (approximately 1 Tbsp.) and enjoy this delicious and nutritious meal.
